Life Updates – April 2019

Happy Good Friday to those of you that are Catholic.  Happy any-ol’ Friday to the rest of you!

I thought I’d give you guys a little bit of a life update, filling you in on what’s new with us, and just a couple random things we’ve been enjoying.

Home

I finally posted photos of our bathroom renovation.  The project has been complete since January, I just kept forgetting to post about it! Better late than never! 😉

We bought new couches for our living room! (Man, I feel old being excited about that!) After 6+ years, we felt it was time to upgrade and pass on our well-loved sectional to my brother who just bought his first house.

The new couches make the room look so much bigger and brighter. I’m obsessed!

Travel

We booked a trip to Las Vegas in May! Just a 4-night trip to unwind & relax, soak up some sun, and hopefully win some money! I am so excited! We’re staying at the Mirage. Drop a comment below if you’ve stayed there before, or if you have any must-see/must-do Sin-City suggestions!

Health

Special thanks to AdvoCare Spark keeping me energized to crush my workouts, and suuuper clean eating, I feel like a different woman than I was a month ago.  I’ve lost 8 lbs! (Peep my Instagram Story for a progress photo!)  I’ve been drinking a gallon+ of water a day, and despite the zillion annoying bathroom trips, it’s making my body feel much better, and my skin look incredible. We’ve been planning healthy, easy meals meals and sticking to them quite well. Consistency is definitely key!

I set a goal for myself to lose a pound a week by our trip, so I have 5 more to go to reach that goal!

Keeping this giant 48 oz. bottle on my desk at work is helping me seriously chug some water during the day! I bought it at a store near me called Meijer, but there are similar ones available on Amazon.

As far as workouts go, I’ve been hitting Planet Fitness almost every day for the past few weeks, mixing cardio & strength training.  If I can’t make it to PF, I’ll hop on our treadmill in our basement, or do a Beachbody workout video at home.  We have a bench in our basement with a good assortment of weights, so Justin can do just about everything he needs to from the comfort of our home, but every once in a while I can convince him to join me for a PF sesh.

Food

Like I mentioned above, we have been eating super clean, and for me that means limiting my carbs.  A couple of new recipes we’ve been enjoying (and making on repeat) are Blackened Tilapia Tacos with Mango Salsa and Portobella Pizzas, which you might have seen on my Instagram. It is honestly so amazing how much better we feel (inside and out!) when we are clean eating and exercising. I can’t stress the importance enough!

Blackened Tilapia Tacos:  Justin made the blackened seasoning, coated the thawed tilapia filets, and seared them in a skillet.  I am always in charge of the salsa, which consists of 1 mango, 1/2 a red pepper (in place of a red onion, because we are an onion-free household), 1 seeded jalapeno, cilantro and lime juice.  I cut up everything really tiny and combine. Serve in street tortillas.

Portobella Pizzas:  We buy the Portobello Mushroom Caps from the grocery store, and fill them with whatever we want. This particular night we made two versions, a Caprese verson and a Classic pepperoni version. Bake on 400 for around 10 minutes, until cheese is melt-y.

  • Caprese: Buffalo mozzarella (pieced), grape tomatoes (sliced) & basil.  Add Balsamic drizzle after baking.
  • Classic: Red sauce, shredded mozzarella, turkey pepperoni (quartered), & Italian seasoning

Media

I recently finished Younger on Hulu, and I’m anxiously awaiting for Season 6 to release.  Sutton Foster, who plays Liza, lies about her age to get an entry-level job as an assistant at a publishing company.  The show follows her journey of working her way up in the corporate world, while maintaining her friendships and relationships. It really is such a super cute show! #TeamJosh 

I know I am late to the game on this one, but I started watching Grace & Frankie on Netflix and it is HYSTERICAL!  Two women in their seventies are forced into friendship after their husbands, long-time law partners, reveal that they’ve been engaging in a 20-year affair with each other and they now want to leave their wives and get married. I’m only on Season 2, but I’m hooked!
